<p>今回は、アフリカが原産地のオクラを使いヴィーガンキムチを作ります。</p>



<p>久々のヴィーガンキムチのレシピになりますが、いつもと違い、塩こうじを使ったレシピをお届けします。<br>ご飯にも合い、お酒の肴としてもおすすめです＾・＾</p>



<p>それでは、材料から見てみましょう。</p>



<p><strong>材料&nbsp; <br></strong>・オクラ 30本<br>・オクラキムチの素&nbsp; </p>



<p><br><strong>作り方　<br></strong>1．<br>オクラのヘタの角を剥きとり、軽く水洗いをします。</p>

<p>２．<br>一本ずつ軽く擦るように塩(分量外）をまぶし、30分漬けておきます。</p>

<p>３．<br>オクラキムチの素を作ります。<br>①<br>・りんご 1/2個(100g)&nbsp;&nbsp;<br>・玉ねぎ 1/4個(50g)&nbsp;<br>・塩こうじ 大さじ2　<br>・薄口醤油 大さじ1&nbsp;&nbsp;<br>・ニンニク 2片　<br>②<br>・唐辛子 大さじ2(粗)　<br>・調味用唐辛子 小さじ1&nbsp; <br>・ごま 小さじ2　</p>

<p>①の材料をミキサーににかけて②と混ぜ合わせます。</p>



<p>４．<br>30分経つと水で洗い、水気をきってオクラキムチの素で和えたら出来上がりです。</p>

　<strong>材料&nbsp; </strong>
・キムチの素 　
・白菜1800g（1/2株）
・天然塩 90g&nbsp; 
・小葱 50g&nbsp; </pre>



<pre class="wp-block-preformatted"><strong>作り方　</strong>
１．
白菜の重さを量り、一口サイズに切りましょう。

２．
白菜を水で洗い、ボウルに入れます。

3．★★★
白菜の重量の5%（90g）の塩を入れてよく混ぜて60分置いておきます。
＊
30分経ちますとひっくり返してください。

４．
昆布だしを取ります。

Ⓐ
・水 200cc&nbsp; 
・昆布5㎝ 2枚&nbsp; 
水と昆布を鍋に入れ、中火にかけます。

Ⓑ
沸騰する直前に火を止めてそのまま冷まします。

５．
キムチの素を作ります。

次の材料を小さく切ってミキサーにかけてボウルに入れましょう。
Ⓐ　
・林檎1/4個　
・玉ネギ 1/4個&nbsp; 
・昆布だし 3/4カップ&nbsp; 
・完熟バナナ 1本　
・赤パプリカ 1/2個&nbsp;&nbsp; 
・ニンニク 25g　 
・生姜 15g　
Ⓑ
・唐辛子（粗挽き）1カップ　
・薄口醤油 大さじ４&nbsp; 
・ゴマ 大さじ2　
ⒶにⒷを入れて混ぜます。

５．
③の白菜を水で2回洗ってサルにあげて水気を切ります。

６．
ボウルに⑤を入れてキムチの素（全部）と3㎝に切った小葱を入れてよく混ぜたら完成です。
