<p>きょうの料理は、普通のキムチと違い、その汁をスープのように飲むことができる水キムチになります。<br>韓国で水キムチは、おかずとして食べたり、スープの代わりに飲んだり、ビビンバか冷麺の具として入れたりします。<br><br>水キムチに素麺を入れてもおいしいですよね。<br>今回は、パプリカを使い、辛い物が苦手な方でも食べられるレシピにしました。<br><br>これから暑くなるので、大活躍間違いなし！のレシピだと思います。<br>それでは、材料から見てみましょう。<br>&nbsp;</p>

・生姜 15g　
・イワシのエキス 大さじ5　
・焼酎 大さじ3　
・天然塩 大さじ4&nbsp; 　
・水 2500ml&nbsp;&nbsp;</pre>



<p>①<br>キムチのりを作ります。<br>・水 500ml&nbsp; <br>・小麦粉 大さじ4&nbsp;&nbsp;</p>

<p>鍋に水と小麦粉を入れて球が出来ないように混ぜながら火にかけます。</p>



<p><br>沸騰したら、さらに1分間沸騰させ、火を止めて冷まします。</p>

<p>②<br>フードプロセッサーに2～3㎝の大きさに切ったパプリカとニンニク、生姜を入れて回します。<br><br>&nbsp;③<br>りんご、玉ネギ、大根をすり下ろし、汁のみとっておきます。&nbsp;</p>

<p>①,②,③と残りの材料を合わせ、水キムチの素を仕上げます。</p>

<p>　4．<br>玉ネギは千切りにし、小ネギは約4㎝に切ります。<br>＜水キムチの素に＞に＜2＞と＜4＞を入れたら出来上がりです。</p>

<p>皆さん、アンニョンハセヨ！<br>今回は、キャベツを使った簡単なキムチの作り方をご紹介します。<br><br>韓国で一般的に冬に漬ける白菜キムチの場合は、長期保存用で長くは一年～3年後に食べる時もあります。<br><br>韓国では各家庭にキムチ専用の冷蔵庫が有って、熟成期間を調節することができるので、自分好みの味のキムチが食べられるようになりました。<br><br>1年以上かけてゆっくり熟成されたキムチは普通のキムチでは味わえない深い味わいがあります。<br>その味が分かると韓国通！として認定します＾・＾<br><br>キムチの話になるとすぐ熱くなって前置きが長くなってしまいましたね。<br><br>では、本題に入って材料からみてみましょう。</p>

・胡瓜2本

<p><strong>作り方　<br></strong>1．<br>キャベツは4㎝くらいに切り、胡瓜は縦に4等分してから長さ4㎝に切ります。</p>

<p>一般的なマッコリの飲み方は振り混ぜてから飲みます。</p>



<p>振り混ぜる前は清酒のような上澄み層と沈殿物層に別れています。<br>マッコリはこの二つを混ぜて飲むことで本来の味が味わえます。 </p>



<p>しかし混ぜる前の<strong>「上澄みだけの味はどうか！」</strong>気になりませんか？</p>

<p>韓国では、わりと一般的な飲み方がこの上澄みだけ飲む！飲み方です。<br>上澄みだけ飲むとどんな味がするでしょうか？<br>炭酸入りの日本酒のような感じだと分かりやすいでしょうか。<br>日本酒と比べるとアルコール度数は低く、微炭酸なのでより飲みやすくなります。<br>マッコリは大体アルコール度数が６％ですが、普通の炭酸飲料と勘違いするほどぐいぐい飲めます。<br>あっという間に一本空けちゃいます。<br>&nbsp;</p>



<p>日本ではマッコリは輸入商品なので韓国に比べると高く、贅沢な飲み方の気がしますが、韓国では高くて5000ウォン(500円）以下。<br>スーパーで買うと2000ウォン(200円）くらい。<br>こんなに安かったら贅沢出来ますよね＾・＾<br>&nbsp;</p>

<p>ですが、コンビニなどで見かけるマッコリは生マッコリではないことをご存知でしょうか？<br>コンビニで売っているマッコリは生マッコリではなく、マッコリです。<br><br>そもそも生マッコリとマッコリは違う物？<br>生マッコリとマッコリには大きな違いがあります。</p>



<p>生マッコリとマッコリの違い①<br>生マッコリは非加熱マッコリで、マッコリは加熱マッコリのことです。</p>



<p>他の料理・タレなども加熱してるものは賞味期限が長いので流通しやすくなりますよね。<br>その反面非加熱のものは加熱してない為、賞味期限が短くなり、流通しにくくなります。</p>



<p><br>一般のスーパーにあるマッコリは加熱マッコリで賞味期限が長いです。</p>



<p>生マッコリが一般的なスーパーで見かけられない理由もこれです。<br><br>賞味期限が短いため韓国スーパーのように沢山売れないと賞味期限切れになるからです。</p>

<p>生じゃないマッコリは半年以上あります。</p>



<p>それに対して生マッコリは賞味期限が１～３か月くらいで短いです。</p>



<p>生マッコリとマッコリ違い②<br>いちばんの違いは、賞味期限ではなく、健康的な面にあります。<br><br>生マッコリは加熱していないため、酵母や乳酸菌がそのまま生きていて体の中でいい働きをしてくれます。<br>植物繊維やアミノ酸もたっぷり入っています。<br>そのため、腸の調子がよくなり、肌がよくなります。<br>これ以外にも成人病の予防にもいいと言われています。</p>



<p>生マッコリとマッコリ違い③<br>シュワシュワとした微炭酸が美味しい生マッコリ</p>



<p>生マッコリは加熱していないので、発酵が進みます。<br>発酵が進むにつれ味の変化がおきます。<br>それは、酸味と甘み、ちょっとした苦みも感じられます。<br>生マッコリが人気のいちばんの理由はシュワシュワとした微炭酸だからではないでしょうか。</p>

<p>ポイント②<br>タレの量は？<br>お肉に対してどれくらいのタレを用意すればいいでしょうか？<br><br>タレの量は、水の量をお肉の半分にすればちょうどいいです。<br>今回のレシピですとお肉500gに対して水250(ml)です。<br><br>醤油と砂糖の量は水に対して1/5で、このレシピでは50mlです。</p>
