<p>皆さん、アンニョンハセヨ！<br>今回は、キャベツを使った簡単なキムチの作り方をご紹介します。<br><br>韓国で一般的に冬に漬ける白菜キムチの場合は、長期保存用で長くは一年～3年後に食べる時もあります。<br><br>韓国では各家庭にキムチ専用の冷蔵庫が有って、熟成期間を調節することができるので、自分好みの味のキムチが食べられるようになりました。<br><br>1年以上かけてゆっくり熟成されたキムチは普通のキムチでは味わえない深い味わいがあります。<br>その味が分かると韓国通！として認定します＾・＾<br><br>キムチの話になるとすぐ熱くなって前置きが長くなってしまいましたね。<br><br>では、本題に入って材料からみてみましょう。</p>

<p><strong>作り方</strong><br>1．<br>皮を剥いたら流水で軽く洗ってキッチンペーパーで水気を切る。</p>

<p>2．<br>0.5cmに切ります。<br>さらにそれを半分に切ります。</p>

<p>3．<br>砂糖と塩を大さじ1杯をまぶして1時間漬けます。<br>＊漬ける間、混ぜましょう。<br>4.<br>山芋キムチの素を作ります。<br>以下の材料をすべて合わせてかき混ぜます。</p>

<p>6.<br>水気を切ってボールに入れ、山芋キムチの素で和えたら完成です。<br>ご飯だけじゃなく、お酒が進む肴としてもお勧めします。</p>

山芋キムチはシャキシャキとした食感を楽しむキムチです。
その食感を生かすためには厚さ0.5mm以上に切りましょう。
Point 2
山芋キムチは、長期保存に向いてないため少ない量を作り、早めに食べきるようにしましょう。
Point 3
山芋を触ってかゆくなる方は、触る前に酢水を手につけるとかゆくならないです。</pre>

・ゴーヤ 1本　
・蕪 600g（5個）
・夏キムチの素　
・天然塩 大さじ2  </pre>



<p><strong>作り方　</strong><br>１．<br>ゴーヤを縦半分に切り、種とワタをこそげ取り、4~5㎜に切ります。</p>

<p>蕪は、縦に8～10等分に切ります。<br>葉っぱは柔らかい部分のみを4㎝に切ります。</p>



<p>２．<br>ボウルに＜１＞を入れて分量の天然塩を入れ、混ぜて15分置いておきます。<br><br>15分経ったらもう一度混ぜて更に15分置いておきます。</p>

<p>３．<br>夏キムチの素を作ります。</p>

・梨 1個  
・玉ねぎ 1/2個  
・ニンニク 大さじ１ 
・唐辛子（粗挽き）大さじ4　
・薄口醤油 大さじ1   
・ごま 小さじ2　
・生姜 小さじ1  
・アミの塩辛 大さじ2　</pre>



<p>４．<br>＜２＞を塩気を確認しながら水で2～3回洗い、ざるにあげて15分置いておきます。</p>

ゴーヤの苦みを抑えたい場合は、ゴーヤを別のボウルに入れ、塩小さじ1と砂糖小さじ2を入れて全体を混ぜて20分置いておきます。

その後、水で洗い、水気を切ります。</pre>



<p>５．<br>＜４＞をボウルに入れ、夏キムチの素を入れて和えたら出来上がりです。</p>

<p><span class="fz-18px">次の材料を小さく切ってミキサーにかけ、ボウルに入れましょう。</span></p>

・アミの塩辛　 大さじ2

＊水の代わりに煮干の出汁やブイヨンを使うとさらに美味しくなります。</pre>

<p><span class="fz-18px">3．<br>分量のキムチの素、サイダー、イワシエキスをボウルに入れてトマトキムチソースを作ります。</span></p>
