Typical potato pancakes have a sticky texture, but this time, they are made to be crispy.

You can make two with a 20 cm frying pan and one with a 26 cm frying pan.
・400g potato ・40g Spam (or bacon) ・2 eggs (size S) ・50g shredded cheese ・1/2 tsp black sesame (if any) ・2 tbsp buckwheat flour ・A little parsley powder ＊ If you don't have buckwheat flour, use tempura flour or wheat flour. ・4 tbsp olive oil ・2/3 tsp salt
Peel the potatoes and cut them into julienne.
Cut the spam into 0.5 cm pieces.
Crack the egg and separate the yolk and white.
Place shredded potatoes in a bowl and stir in 2/3 teaspoon salt.
Let it sit for 5 minutes, then rinse with water, drain and place in a bowl.
Add spam, egg whites, buckwheat flour, cheese and black sesame to <1> and mix.
When using a 20cm frying pan.
Put 1 tablespoon of olive oil in a heated frying pan, add half of <2> and spread thinly.
When the bottom side is done, turn it over.
Add a little more olive oil, place an egg yolk in the center and cook over low heat.
