It will take some time, but I will teach you how to make and serve “Kimchi nabe base”, a hot pot specialty restaurant.
It’s not Korean kimchi jeongol, but Japanese style kimchi hot pot like a shabu-shabu specialty restaurant.
Let’s start with the ingredients.
Ingredients 2-3 servings ・Nabe vegetables ・4-5 tablespoons (80g) of kimchi nabe base ・500ml water ・300g pork belly slice
1．Make the Kimchi nabe base.
Ⓐ ・2 onions (400g) ・5 piece garlic grains (50g) ・25g ginger
Finely chop the above vegetables.
Ⓑ ・1 canned tuna (140g) ・300g minced pork ・100ml salad oil ・50ml sesame oil ・80ml fish sauce ・200ml soup Soy sauce ・300ml coarse red pepper powder ・50ml fine red pepper powder
Put sesame oil and salad oil in a pan and fry Ⓐ for 10 minutes.
Then add the minced pork and tuna, and when they are cooked, add the rest of the seasonings.
Fry on low heat for 5 minutes and let cool.
Prepare the vegetables for the Kimchi nabe.
・50g kimchi ・1 green onion ・1/2 pack enoki mushrooms ・1/3 tofu ・1/8th cabbage ・1/4 pack garland chrysanthemum
＊For the ingredients of the Nabe, please refer to the recipe and enjoy it with your favorite meat and vegetables.
Cut each vegetable into bite-sized pieces and place them on a plate.
Fill the pot with water and season with kimchi nabe base to start the Nabe.
If the soup in the pot is getting low, add more water.
