The dish introduced this time is a compote using cheap and familiar fruit mandarin oranges.
It’s easy to make a compote of ordinary oranges, but we will teach you how to make a professional mandarin orange used in Korean restaurants.
See what’s different.
Let’s start with the ingredients.
Ingredients ・10 to 15 mandarins ・500g honey pickled yuzu tea ・150ml cointreau ・1000ml water ・25g powdered gelatin ・A small amount of mint
Peel the mandarin oranges and remove the streaks as they are.
Put a certain amount of water, honey-pickled yuzu tea, and Cointreau in a pan and light it.
When it boils, add 1 mandarin orange and cook over low heat for 20 minutes to cool.
Remove the mandarin oranges from 3 and put them in another container, and mix the yuzu tea with a blender.
Put 1000 ml of Yuzu tea in a pan to warm it, add gelatin to dissolve it, and when the heat is removed, cool it in the refrigerator to harden it.
Place mandarin orange on a plate, sprinkle with crushed jelly and decorate with mint.
