This time, I will introduce how to make fruit kimchi using seasonal persimmons.

I’m sure you will discover a new taste of persimmon that is different from usual.
Let’s start with the ingredients.
Ingredients ・5 sweet persimmons (1100g) ・10g chinese chive ・1tbsp natural salt ・Seasoning of persimmon kimchi
Recipe
1.
Cut the persimmon into bite-sized pieces and peel.

Sprinkle 1 tablespoon of salt and soak for 40 minutes.

Make seasoning of persimmon kimchi.
Combine all the following ingredients and stir. ・1/4 onion (70g) ・1 tbsp garlic ・2 tsp ginger ・4 tbsp of hot pepper flakes ・2 tbsp Salted fermented shrimp(Saeujeot) ・2 tbsp fish sauce

After 40 minutes, rinse twice with water.

Drain the water, put it in a bowl, and mix it with seasoning of persimmon kimchi to finish.
